Using the three traditional Sauternes grape varieties Sémillon, Sauvignon and Muscadelle this wine is the result of a severe selection. So as to optimise the beneficial effects of Noble Rot („La Pourriture Noble”), harvesting is carried out in a series of selective pickings which often necessitates the grape-pickers going through the rows up to 4 or 6 times.
Each vintage is vinified and aged in French-oak barrels, which are entirely renewed every harvest, for 16 to 18 months.
Even so, in accordance with Chateau La Tour Blanche’s policy of quality, certain vintages (although certified passable) are not bottled. This was the case for the 1992, 1993 and 2000 vintages.
Annual production averages 45,000 bottles.
